Does Baking Reduce Iron Content In Blackstrap Molasses

Does baking reduce the iron content in blackstrap molasses? I would like to use it in ginger cookies.

Dear Sue,

It is wise to wonder if baking will affect nutrients, as it surely can. But I do not think it hurts the iron in Blackstrap.

When I was pregnant and needing to keep up my iron, I made gingerbread that used lots of Blackstrap and ate some daily. It surely seemed to work!

Also, sometimes it is recommended that one use a cast iron skillet when cooking as iron will leach into the food, and that is going to always be heated. In fact, I LOVE to cook in my cast iron skillet. But I am a bit off topic now!
